Blueberry Muffins

Bake these QNT muffins up for a quick breakfast, fun snack, or lunch box treats! No matter when you serve them, they’re sure to be a new favorite. Higher in protein to balance the carbs, gluten free & low in calories.

for 1 person

  • 1 tsp Gluten-free almond flour
  • 2 tbsp Stevia or Agava syrup
  • 1 tbsp QNT PRIME WHEY PROTEIN (Vanilla)
  • 1 tsp Cinnamon
  • ½ tsp Baking powder
  • 1 Egg
  • 1 tbsp Coconut oil
  • 1 tsp Milk
  • 1 cup Fresh blueberries
  • 1 cup Greek yogurt

Preparation

Step 1: In large microwave-safe bowl, combine together your Almond flour, Prime Whey Protein (vanilla) , sweetener, cinnamon, baking powder and mix it well


Step 2: Add Coconut oil, egg, milk, and mix to an even batter consistency (add more milk as needed)


Step 3: Mix in fresh blueberries


Step 4: Use a microwave to cook muffins for 3 min until fully cooked


Step 5: Remove from microwave and allow the muffins to cool completely

>Step 6: Once they are cooked, break the muffins into crumbles


Step 7: Combine half of muffins with half of Greek yogurt and put into glasses 


Step 8: Decorate with more blueberries 


Step 9: Enjoy!
