Today, Monday the 15th of March, is a special day for a special person! Indeed, we are celebrating the birthday of our Digital Marketing Manager, Alex Debecq.
And what would be better than having a healthy, low carb, high-protein chocolate cake for the occasion?
The answer is: nothing better for celebrating this day without feeling too guilty! Happy birthday Alex!

for 1 person
- 3 eggs
- 50 g METAPURE protein powder (Belgian chocolate)
- 100 g Greek yoghurt
- 40 g METAPURE Protein Powder (Vanilla)
- 40 g Cocoa powder
- 1 tsp Vanilla drops
- 2 tbsp Psyllium husk
- 20 g Dark chocolate 70% cocoa
- 500 g Mascarpone cheese
- Oreo crumbs
Preparation
For the biscuit (bottom of the cake):
Step 1: Separate the egg yolks from the egg whites.
Step 2: Add 100 g of Greek yoghurt, 30 g of Whey protein chocolate, 2 tablespoons of psyllium and 20 g of cocoa powder and mix well.
Step 3: Melt 20 g of chocolate and pour it into the mixture.
Step 4: Beat the egg whites until stiff and mix gently the two mixtures.
Step 5: Pour into a baking pan lined with baking paper and bake for 30 minutes at 180°.
For the cream:
Step 1: Mix 250 g mascarpone with 20 g of chocolate whey protein in a blender and add 20 g of cocoa powder.
Step 2: In a separate bowl, mix 250 g of mascarpone with 40 g of vanilla whey protein and 1 teaspoon of vanilla drops.
Step 3: Mix the two creams together.
Step 4: When the biscuit has cooled, cover it with the cream.
Step 5: Sprinkle Oreo crumbs on top of the cake.
Step 6: Leave in the freezer for an hour, then put in the fridge for at least 2 hours to firm up.
Step 7: Happy birthday and bon appétit!
